An Acadian Meal

I'd never heard about the Acadians until I came across a little Acadian cookbook at the library sale. It contained cake and pastry recipes from the Acadian community in southwest Louisiana. The Acadians, French pioneers who had settled in Nova Scotia in Canada, were deported from Acadia by the British in 1755. Many of them later settled in Louisiana where they became better known as the Cajuns.

I made two cakes from this recipe book and served them both at a tea I hosted. They were both excellent, if all fashioned, and I'd make them again.
