This recipe for cornbread got mixed reviews: I thought it lacked "unf" while Mike said it was fine. He didn't ask for seconds, though, so he can't have liked it that much. In any case, it's not much better than what you get by using a mix out of a box.
Yellow Cornbread
Ingredients
3/4 cup yellow cornmeal 3/4 cup all-purpose flour 2 tbsp. sugar 1 tbsp. baking powder 1/2 tsp. salt 3/4 cup milk 1 egg 3 tbsp. melted butter
Preheat oven to 425 F. Grease an 8" baking pan. Put dry ingredients in a large bowl. Add the milk, egg and butter. Beat until smooth, about 1 minute. Pour batter into baking pan. Bake in the oven for about 20 minutes, the top should be lightly brown and if you insert a toothpick into it, it should come out dry.
