I came across the website of the Zapardiel Gastronomic Society, which features recipes from the Basque province of Álava,
while surfing the net. Gastronomic Societies, groups of men (and increasingly women) who get together to cook and eat good
food, are one of the best inventions to come from the Basque. Unfortunately most of them don't have websites, and even the
Zapardiel website only features a handful of Alavesan recipes. I decided to try the one for oxtails because I love oxtails,
though it probably wasn't the best choice.
