Broccoli is my husband's favorite vegetable, so when I found this recipe I knew I had to make it. It's very simple and easy to make - and while I severely overcooked the broccoli, my guests still liked it. I modified it only slightly decreasing the cooking time and increasing the amount of cheese it called for.
Broccoli with Cheese Sauce
Ingredients
Broccoli 2 cups chopped onions 4 tbsp. flour 1 tsp. salt 2 cups milk 1/3 lb. mild Cheddar Instructions
Cook broccoli in a small amount of water or steam it. Make sure not to overcook. Meanwhile, make cheese sauce. Put flour, salt and milk in a sauce pan and cook until thick, stirring regularly. Add cheese and stir until it melts.
Preheat oven to 375-degrees. Butter an oven-proof casserole. Put half the broccoli on the casserole. Add chopped onions and half of the cheese sauce. Add the remainding broccoli, top with the rest of the sauce. Cook in the oven for 30 minutes.
