This is a very simple recipe for salmon patties. They resemble crab cakes in that they are made from seafood and fried, but are much healthier as they don't contain any mayo. To make them even healthier, use egg whites instead of whole eggs, use skim milk and broil them rather than fry them. I used canned salmon, and that seemed to work very well. My husband really liked them so I'll probably make them again. Though the original recipe doesn't call for it, serve them with a slice of lemon. I think that most seafood benefits greatly from a little lemon juice.
Fried Salmon Patties
2 cups cracker crumbs 1 cup salmon 1 tsp. salt 2 eggs, beaten 1 1/2 cups milk Pepper to taste Butter for frying
Mix all ingredients together. Heat butter on a frying pan, and drop mixture by tablespoons. Flatten with the back of the spoon. Brown on each side and serve.
