The Persian Empire was one of the greatest civilizations of the ancient world. As architecture, art and sciences evolved, so did cuisine – and Persian cuisine became renowned throughout the region for its refined mixture of flavors and textures.
The recipes below, which I found in The British Museum Cookbook, are the sort of thing you can find in any modern Persian restaurant. So personally I don't know how ancient they really are. All I can say is that they are good.
