Nimboo Pani

Limeade


Lemonade and limeade are just as popular in India as they are in England, and this became the staple drink of mensahibs during the hot Indian days. It can be made either with lemons or lime depending on fruit availability and personal preference. I made it with limes and I liked it, though I think it was a little bit too sour (or not sweet enough) for my guests. You may want to increase the sugar (and the salt).


Nimboo Pani

Ingredients

  • 1 pint water
  • 6 limes
  • 4 tbsp. sugar
  • 1/4 tsp. salt
  • 12 ice cubes

    Instructions

    Boil the water. Juice the limes and strain the lime juice. Pour into a jug. Put the lime rinds in a bowl and cover them with the sugar. Pur the boiling water over the lime rinds and let rest for 15 minutes. Add the salt and stir. Strain this liquid into the jug with the lime juice. Add the ice cubes and refrigerate. When serving, pour into glasses containing 4 additional ice cubes each.
