Finding Antiguan recipes on or off-line is not very easy, I hadn't been able to find any I wanted to cook by the time I finished the "A's". But a few weeks ago I found out that Recipe Island had few. I forwent the national Antiguan dishes, Fungi & Pepperpot, as they didn't really appeal to me, and instead I decided to make the pork dish below.
