Pork Chops With Banana And Bacon

I had never had the combination of bacon and banana before, and to be truthful, it sounded somewhat weird to me. No longer. I can testify that chunks of banana, wrapped in bacon and broiled, make a mighty tasty treat. They were a good accompaniment to the otherwise lackluster pork chops, and would also make a fun breakfast dish (in moderation, of course).

I followed the original recipe pretty closely, though I forgot to sprinkle the banana chunks with the juice of 1 lemon. I actually think they turned out better without the juice. I also broiled, rather than grilled, the pork chops, but you can definitely grill them instead (look at the original recipe for instructions).



Pork Chops With Banana And Bacon

Ingredients

  • 8 slices bacon
  • 2 large bananas
  • 2 Tbsp. softened butter
  • 3/4 Tbsp. cumin
  • 4 pork chops
  • salt & pepper

Saute the bacon until some of the fat is rendered. Remove and dry with paper towels.

Preheat broiler.

Slice each banana into 4 large chunks. Cut bacon slices into portions that are just long enough to wrap each banana chunk. Wrap each chunk with a slice of bacon. Place in skewers, threading through were the bacon slice overlaps. Set aside.

Mix the cumin with the butter. Season each pork chop with salt & pepper, and then cover with cumin butter.

Place in broiler and broil for 3-5 minutes, depending on thickness. Turn the chops and place the banana skewers in the broiler. Cook for 3-5 more minutes. Serve.
