If found this salad in a webpage providing recipes for an elite Austrian dinner at the ever-useful Sally's Place website. The salad was simple enough but even then I managed to mess it up. I forgot to toast the walnuts and add the blue cheese the original recipe asked for and I spilled half of the vinaigrette, which meant that there wasn't enough so the salad ended up being too boring. My guests ate it but they thought it was just "OK".
On a final note, the original recipe calls for 1 tsp. of cassis syrup. Predictably, I couldn't find that at my local supermarket and I didn't think the small quantity justify spending the time and effort that it would require to find it elsewhere, so I substituted with pancake boysemberry syrup (now I have an excuse to make some pancakes!). The version below is the recipe I made.
Pear salad with Raspberry Vinaigrette
Ingredients
For the salad
6 cups salad greens 2 pears, peeled & sliced 1/3 cup walnuts, coarsely chopped For the vinaigrette
1/4 cup olive oil 2 tbsp. rapsberry vinegar 1 tsp. cassis syrup 1 shallot, finely chopped 2 tsp. Dijon mustard. Instructions
Prepare the vinaigrette by mixing together all the ingredients. Toss the vinaigrette with the salad greens. Top with the pears and walnuts.
