Awadh, better known to anglophiles as Oudh, is a region of northern India now within the state of Uttar Pradesh. It was part of the Mughal empire and was later ruled by the nawabs of Lucknow. Its cuisine has roots both on Indian and Mughal cuisine, and Awadh is known for distinctive kormas, kebabs and desserts.
I recently became aware of this cuisine, decades after I visited other "A" cuisines, so I made a single dish. Unfortunately, my bad luck with Indian food continued and it was just OK.
