I don't eat vegetables (even cucumber) so I didn't actually taste this recipe. Mike wasn't thrilled with it, but my other guests said they liked it. It's simple enough to make and it thanksfully does not require a Balinese spice mix, though seeding the cucumbers can be a pain. Try to find seedless cucumbers if you can.
Cucumber with Coconut Sauce
Ingredients
- 2 tbsp. oil
- 3 shallots, peeled and sliced
- 2 cloves garlic, peeled and sliced
- 2 large red chilies, seeded and sliced
- 1/2 tsp. shrimp paste
- 2 cups coconut milk
- 2 cucumbers, peeled, seeded and sliced
- salt & pepper to taste.
Instructions
Fry shallots, garlic and chilies in oil, over low heat, for 2 minutes. Add shrimp paste and fry for 1 mimunte. Add coconut milk, bring to a boil, reduce heat and simmer for 5 minutes. Add cucumbers, bring to a boil, reduce heat and simmer until the sauce thickens and the cucumbers are soft. Season with salt and pepper and taste.
