I had quite a few difficulties finding a Belizean dessert I wanted to make. I settled on this one, not too sure of how "authentic" it is, because the combination of bananas with sugar, rum and custard seemed interesting. The results were good though not outstanding.

Preheat oven to 350F
Place bananas in a baking dish. Sprinkle with lime juice and sugar. Let rest for five minutes. Pour rum over the bananas and dot them with butter. Bake for about 10 minutes.
Meanwhile, prepare the custard powder according to package directions, but don't refrigerate.
Remove bananas from oven and pour part of the custard so as to cover the bananas. Return to the oven and bake for 10 additional minutes.
Reserve rest of the custard for other uses.
