Bonaire, along with Antigua and Curacao form part of the ABC Islands, located off the coast of South America, and were once part of the Netherland Antilles - a country that no longer exists. Bonaire is now a Dutch municipality.

Bonairean cuisine, as most Caribbean food, is a creole cuisine that brought together native ingredients with African and Dutch cooking styles, and was influenced by the cuisine of nearby islands.

I skipped making Bonaire food back in the early 2000s, when I hit "B" cuisines, but I recently came across a reference to Bonaire again so I decided to visit this (and other previously skipped) cuisines and make a single dish, for the sake of completeness. The dish I chose might not be the most typical Bonairean dish but it was just too fun not to make it.
