Rather than making a Calabrian menu, I made Calabrian main dishes three different times. I didn't find enough appetizers and
desserts that were doable with locally found fresh ingredients and that would please me and my family. The dishes I made had
mixed success.
Calabria is a rugged region in the coast. Fish, lamb and pork contribute greatly to their diet - but like other Italians,
they also like pastas. Their cuisine is characterized by the generous use of peppers. They are also experts at preserving
foods to last the seasons.
