Green Salad With Papaya Dressing
This Caymani salad was fairly easy to make, but too sweet for our tastes. If you do make it, I'd skip the sugar in the salad dressing.
Green Salad With Papaya Dressing
Ingredients
- 6 cups mesclun salad greens
- 1 papaya, peeled, seeded and diced (seeds reserved)
- 1 medium tomato, peeled, seeded and diced
- 1 Tbsp. white wine vinegar
- 1/4 tsp. dry mustard
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 2 tsp. sugar
- 1/4 cup vegetable oil
Instructions
In a large bowl, combine the salad greens with the diced papaya and tomato.
In a medium bowl, whisk the vinegar, dry mustard, salt, pepper and sugar together. Whisk in the vegetable oil and then mix in 1 Tbsp. of the reserved papaya seeds.
Pour vinaigrette over the salad, toss and serve.
