The cuisine of Champagne is rustic and hardy. Champagne has some of the largest wild game hunting grounds in France, and game features prominently on Champagnoise cuisine. The influences of neighboring Belgium are also felt, Belgian waffles are commonly sold in stores and Flemish dishes such as carbonnade de boeuf form an integral part of the cuisine of Champagne.
The menu below features only two dishes; I did not include a dessert because the only recipes I could find required ingredients that would be difficult to find here in California.
