Chiapan cuisine very much falls within the spectrum of Mexican cuisines, incorporating local ingredients with European ideas. Chiapas has a large Maya indigenous population, and many of its most popular dishes fall within that tradition, dishes are simpler and rely less in chilis than in more northern parts of the country.
