Beignets au Fromage èt a la Menthe Cheese and Mint Beignets
These beignets - or 2-bite-size fritters - are absolutely delicious and quite simple to make. I halved the recipe and roughly converted it to American measurements. The results were incredible - even my kids liked them! I used goat cheese, though you could use other soft cheeses - but I'd stick with goat cheese if I was you.
Cheese and Mint Beignets
Ingredients
- 3/4 cup flour
- 1 dash of salt
- 1/2 tsp. yeast
- water
- 12 mint leaves, chopped
- 1 small egg
- 8 oz goat cheese
- oil for frying
Directions
Mix the flour with the salt and yeast and sufficient water to make a thick paste. Add the chopped mint and mix. In another bowl beat the egg and crumble the cheese over it. Mix. Add the egg mixture to the flour mixture and mix well.
Heat oil in a pot and, once hot, use a tablespoon to drop balls of dough. Fry until golden.
