Whatever I know, or don't know, about cowboys, I learned it by watching countless cowboy shows when I was growing up. Silly me, I assumed that cowboy cuisine would consist of quick stews with few adornments, prepared over an open fire after a hard day of work. Perhaps, but what I found when I went looking for recipes were complex, modernistic recipes with southwestern flavors and broad appeal. They seem more like the type of recipes that would be cooked by a professional cook at the mansions in Dallas (or even Big Valley) than by working men. Whatever.

The recipes I chose included the worst thing I ever cooked (the steak) and one of the best (the bread pudding). You are forewarned.
