Primosten style chicken


A relatively simple but winning recipe from Croatia. I don't think I made any substantial changes and we all enjoyed it.


Primosten style chicken

Ingredients

  • 4-5 lbs chicken pieces
  • salt and pepper to taste
  • 2 Tbsp. flour
  • 1/4 cup olive oil
  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • 2 oz prosciutto, chopped
  • 3 tomatoes, chopped
  • 1 Tbsp. tomato paste
  • 1/4 cup sherry
  • 1 cup water
  • 1 lb. potatoes, peeled and cubed
  • leaves from 1 rosemary spring, chopped
  • 1/4 cup capers
  • 12 oz frozen peas
  • 1/2 cup parsley, chopped

Instructions

Salt and pepper the chicken pieces. Coat with flour. Heat the oil over medium-high heat in a large saucepan. Add the chicken and cook, in batches, until browned on all sides. Remove the chicken pieces from the oil and set aside.

Reduce the temperature of the oil to medium. Add the chopped onion and fry, stirring often, until softened, about 5 minutes. Add the garlic and prosciutto and cook for 2 more minutes. Add the tomatoes, tomato paste and chicken pieces. Mix well. Add the sherry and the water and season again with salt and pepper. Add the potatoes and rosemary and gently simmer, uncovered, for about 20 minutes.

When the chicken is almost cooked through, add the capers and peas and a little bit more water and cook for 10 more minutes. Sprinkle with parsley and serve.
