This Cuban dessert is basically a cross between a traditional flan and a cheesecake. Unfortunately, I thought it wasn't as good as either. Don't take me wrong, this was a perfectly fine dessert - but it lacked the richness and egginess of a flan or the sultriness of a cheesecake. I wouldn't bother with it again.
Flan de Queso
Ingredients
3/4 cup sugar 5 large eggs 1 1/2 cups milk 1 can condensed milk 8oz cream cheese 2 tsp. vanilla extract Instructions
Preheat oven to 375.
Set out 10 - 12 1/2 cup ramekins. Melt the sugar in a small, heavy-bottomed pot, stirring constantly. Carefully pour the sugar at the bottom of each ramekin. Set aside.
Beat the eggs until frothy. Mix in the milk and pass through a sieve. Pour into the bowl of an electric mixer and add the condensed milk, cream cheese and vanilla extract. Mix on medium-low until combined. Pour into the ramekins.
Pour about 1/2" of water into two deep and large baking/broiling pans. Place the ramekins in the water and put in the oven. Turn down the temperature to 350F and bake for 40' to 1 hour, until the flans have set. Cool before serving.
