Salsa de Maní Ecuadorian Peanut Sauce
This peanut sauce is traditionally served with llampingachos. The sauce was better :-)
Salsa de Maní
Ingredients
- 2 Tbsp. butter
- 1/4 cup chopped onion
- 1/2 jalapeno, seeded and chopped
- 1 tomato, peeled, seeded and chopped
- 1/2 cup chunky peanut butter
- 2 - 4 Tbsp. water
- salt & pepper to taste
Instructions
Heat butter over medium heat on a small to medium pan or skillet. Once melted add the onion and saute until it starts to brown. Add the jalapeno and tomato and cook over medium-low heat until the sauce becomes mushy. Mix in the peanut butter. Add water, 1 Tbsp. at a time, until the sauce has the consistency you like. Adjust seasoning and serve.
