Pannu Kakku Finnish Pancake
That's it! I'm moving to Finland!
This is yet another winning recipe from our Finnish friends and this one is fantastic. It's an oven-baked combination of pancakes and custard, extremely quick and easy to make (though it takes 40 minutes to bake) and absolutely delicious. I think this will become a staple of our weekend mornings.
I've modified the original recipe a little bit by adding more flour, as it was a bit too runny. Feel free to experiment
You can serve this pancake with syrup or jams, but I don't think it needs anything. It's delicious as it is.
Finnish Pancake
Ingredients
- 4 large eggs
- 4 cups milk
- 1 1/3 cup flour
- 1/2 cup sugar
- 1 tsp. vanilla extract
- 1 tsp. salt
- 4 Tbsp. butter, melted
- powdered sugar
Instructions
Preheat oven to 400F. Grease a 9"x13" oven-safe pan.
In a large bowl, beat the eggs. Add the milk, flour, sugar, vanilla extract and salt. Mix well. Add melted butter and mix again. Pour into the prepared pan.
Bake in the oven for 40 minutes or until it sets.
Remove and let cool somewhat. Sprinkle with powder sugar and serve.
