Fish in Peanut Sauce


Savory peanut and peanut butter based sauces are very common in West Africa. Of all the dishes I've made this was not my favorite in the least, but it was OK. I did have to use much more peanut butter than the recipe asked for in order to give the sauce enough flavor.

I served it with rice.


Fish in Peanut Sauce

Ingredients

  • 2 Tbsp. peanut oil
  • 2 lbs firm white fish
  • salt & pepper to taste
  • 1 large onion, chopped
  • 2 tomatoes, chopped
  • 1 cups peanut butter

Instructions

Heat the oil in a large frying pan over medium-high heat. Add the fish and brown on both sides. Turn down heat to low, add 1 1/2 cups of water and season with salt and pepper. Simmer for 5 minutes. Carefully remove the fish from the pot and set aside.

Add the onions and tomatoes and simmer for 30 minutes. Remove a cup of the simmering liquid, place in a bowl and mix with the peanut butter. Add this mixture back to the pot and stir until combined. Return the fish to the pot and cook until it's done, about 10 more minutes.
