Hake Galician-style


Merluza a la gallega

Merluza a la gallega is one of the most traditional Galician dishes and yet I had never tried it, perhaps because my family is not from Galicia. Unfortunately my attempt was not a success. This dish is so simple that it requires first-class ingredients, in particular fresh and high quality hake. I used frozen to my peril. That said, the dish was perfectly edible, just very light in flavor.


Hake Galician-style

Ingredients

  • 1 onion, peeled and halved
  • 6 medium potatoes, peeled and sliced into rounds 1/3" thick
  • 1/2 cup + 2 Tbsp. olive oil
  • salt to taste
  • 2 lbs hake filets
  • 5 garlic cloves, peeled
  • 1 Tbsp. Sweet paprika

Directions

Fill a large pot 2/3rds with water and add the onion, potatoes, 2 Tbsp olive oil and salt to taste. Heat over medium high heat until it boils, then reduce heat to medium-low and cook for ten minutes. Reduce heat to low, add the hake filets and cook until done, around 5-8 minutes.

Meanwhile heat 1/2 cup of olive oil over medium heat in a small frying pan. Add the garlic cloves and cook until brown. Turn off the heat, add the paprika and mix well.

Using a slotted spoon remove the fish and potatoes from the pot and plate. Drizzle with the paprika oil.
