I knew very little about Guam, and nothing about its cuisine, before I embarked into this culinary adventure. I was thrilled to find in this little island in the middle of the Pacific Ocean dishes that I could recognize. For centuries, Guam was a stop for Spanish galleons on their way from the Philippines, leaving both Spanish and Filipino imprints on Chamorro cuisine. With great native ingredients and so many cultural influences, Chamorro food is both familiar and exotic and quite delicious.
There are fortunately quite a lot of Chamorro food sites, and I'd encourage everyone to visit them. These are the dishes I made:
