Located right in the center of Mexico, Guanajuato is as representative of the country as you get. Its cuisine has a long tradition and offers a fusion of Spanish recipes with local ingredients.

My culintary journey through the region had mixed results. I enjoyed the peanut mole I encountered, which might have influenced the cuisines of African countries, and discovered that bacon is a great addition to rice. The chicken dish, however, was bland.
