Guatemala has a very dear place in my heart. That's where my husband and I got married and spent our honeymoon almost a decade ago. We backpacked through the countries, travelling in the old American school buses that served as inter-city public transportation and eating at road stands and cheap restaurants. Neither of us hold particularly good memories of Guatemalan food. Indeed, all I can remember is eating is a lot of dry fried chicken.
Fortunately, my experience cooking Guatemalan cuisine was nothing like my memories of eating it. The three dishes I made were very good and they highlighted the mixtures of Mayan and Spanish cuisine that is so characteristic of Guatemalan food. Two of the dishes I made are considered a cultural heritage of Guatemala.
