Hangzhou is one of China's largest cities - with over 9 million residents. Its cuisine is said to be "fresh, tender, soft, and smooth, with a mellow fragrance," and it favors sweet over savory flavors. Many of its dishes are based on the fish of the West Lake - which obviously I couldn't prepare. Some of its most famous dishes, such as beggar's chicken, are quite elaborate - I focused on easier ones. Breakfast Tofu a simple dish to prepare that works as dinner as well.
