Potato biscuits


Boxty


Boxty are a cross between biscuits and potato pancakes. They are made from a combination of mashed potatoes, shredded raw potatoes and flour. They can be eaten for breakfast or lunch alongside other dishes.

I am sure that there is a secret on how to make good boxty because the ones I made were terrible. They were dense, dry and insipid, probably best suited as paperweights. Even the dog wasn't interested in eating them.

I am thus forgoing including the recipe as there is really no point in making these.
