Sauce Arachide Ivorienne
Ivorian Peanut Sauce
This is a vegan recipe.
Peanut based stews are very common in West Africa, and I've made quite a few of them. This is a simplified version which was very easy to make vegan by just substituting vegetable broth for chicken broth. The original recipe called for serving it with ground beef, but you can serve it with any precooked vegetables or meats you want - or even add some more water and simmer it in the sauce. I did just that with some vegan chick'n strips.
