Kansai is the region of south-central Japan that includes Kyoto and Osaka. It's a culturally diverse region with a lot of diversity in its cuisine as well. Food is revered in this region, and street food is particularly popular. Indeed, the first thing I prepared in the exploration of this cuisine were kushiage, deep fried panko-breaded meat and veggie skewers. These are served with dipping sauces and sold at street markets in Osaka and elsewhere. Alas, I didn't write down the recipe after I made them, though unfortunately the one I used wasn't great.
While Kansai cuisine can be very sophisticated and even luxurious, most of it did not appeal to me as a diner and was too challenging to me as a cook. Thus I only made a couple of dishes that while very associated with the region nowadays, are perhaps not really representative of the cuisine:
