Kyushu is the southernmost region of Japan, encompassing its third largest island and the ones around it. It's home to Okinawa and Nagasaki as well as several other prefectures. Its cuisine is varied, with seafood being prominent in the north and meat in the south. More than other Japanese cuisines, it's been exposed to foreign influences and yoshoku dishes abound. That's a good thing, because I discovered through my exploration of Japanese food that I don't really like autochthonous Japanese fare. This is not really too much of a surprise, given that I dislike sushi and I usually avoid going to Japanese restaurants.
In my exploration of Kyushu cuisine I made three dishes of foreign origin. The first, chicken nanban is a fried chicken breast with a special sauce, apparently inspired by Portuguese cuisine. I made it over two years ago and I didn't write it down, and unfortunately my memories of it have completely disappeared. Instead of remaking it, I went with chicken karaage, a similar fried chicken dish but of Chinese origins. I also made some cookies, originally conceived by a Dutch baker in Nagasaki.
