Pork Meatballs
   
 
  
Kotletes or flattened sautéed meatballs, are the Latvian lunch par excellence. They are quick and easy to make and surprisingly tasty. There are many variations, but this very simple one was very tasty. The sour cream in the mixture gives it the sour tone it needs - substituting for the lemon juice I like to add to fritters. 
Kotletes are usually served with boiled potatoes and a simple salad. I'm not a fan of plain potatoes, so I made a mushroom sauce to serve with them, which was delicious.

Kotletes
Ingredients
 
- 1 lb ground pork
 - 1 egg, lightly beaten
 - 2 Tbsp plain breadcrumbs
 - 2 Tbsp sour cream
 - 1/2 tsp salt
 - 1/4 tsp ground black pepper
 - Olive or another cooking oil for sauteing. 
  
Directions
 In a medium bowl, mix together the pork, beaten egg, breadcrumbs, sour cream, salt and pepper. Form into 1" balls.
 Heat a thin layer of oil over medium-high heat in a lidded sauté pan. Add the meatballs and flatten, using a spatula. Sauté until brown. Flip and repeat. Cover the pan and reduce heat to medium-low. Cook for about 5 to 7 minutes, or until cooked through.
