 Puff Pastry Cinnamon Roll
   
 
  
This recipe for cinnamon rolls made with puff pastry is very basic, and probably not particularly Latvian, but I was looking for something to make with some puff pastry that I'd accidentally defrosted and this fit the bill. It's basic but delicious. My puff pastry didn't quite puff up - perhaps it'd been in the fridge too long - but that didn't matter as far as its addictive value.

 Puff Pastry Cinnamon Roll
Ingredients
 
- 1/2 cup sugar
 - 1 Tbsp ground cinnamon
 - 1 package puff pastry
 - 1 egg, beaten
  
Directions
 Preheat oven to 425°F. Cover a baking sheet with a baking mat or parchment paper.
 In a small bowl, mix sugar and ground cinnamon together. 
 Lay puff pastry sheets on a working surface and stretch using a rolling pin. Brush surface with the beaten egg. Sprinkle cinnamon sugar on top. Roll into a log. Cut log into slices and transfer each slice onto the prepared baking sheet. Brush the tops with the remaining beaten egg. Bake for about 15 minutes.
