Pineapple Banana Cream

Sometimes you ask yourself "why didn't I think
of this myself?" And that was exactly my reaction after making this very simple, but delicious dessert. It's just pineapple and banana blended with cream and a touch of vanilla. It works because the banana smooths the sharpness
of the pineapple, so you can taste it without it burning your mouth. It's quite refreshing without being too heavy. The recipe below makes two portions.

Ingredients for 2 portions
- 1 1/4 cup very ripe pineapple chunks, divided
- 1 large very ripe banana, peeled and halved
- 1/4 cup heavy cream
- 1 vanilla pod
- pinch of salt
- sugar to taste
Directions
Place 1 cup pineapple chunks in an electric blender. Add the banana and the heavy cream. Cut the vanilla pod in half vertically. Scrape the pulp of one of the halves into the blender. Add a pinch of salt. Blend until you have a smooth consistency. Taste and adjust sugar.
Dice the rest of the pineapple. Serve the banana cream with the diced pineapple on top.
