Malian Hibiscus Iced Tea
Hibiscus iced teas are not particularly popular in America, but they are all the rage in Africa and even Mexico. I've tried my fair share of versions, and while I'm not the biggest fan, I did have a lot of dried hibiscus flowers so I figured it was worth trying them in this manner.
The tea was OK, and I didn't see my daughter, who was fond of the Egyptian version, karkadeh, when we visited that country, rush to have more later. She found the mint added to it to not work terribly well.

Jus de Bissap
Ingredients
- 1 cup dried hibiscus flowers
- 1/2 cup superfine sugar
- 1 Tbsp vanilla sugar
- 1/2 tsp orange blossom water
- 10 mint leaves
Directions
Rinse hibiscus flowers and set aside.
Boil 1 quart of water over high heat. Add the flowers, stir, turn heat to low and simmer for 10 minutes. Let cool slightly. Strain into a pitcher. Mix in the sugars and the orange blossom water. Add the mint. Refrigerate or serve immediately over ice.
