Filipino food is home food at its best. Nowhere have the cuisines of Europe, the Americas and Asia so perfectly merged. There might be such a thing as Filipino high cuisine, I have not encountered it either at Filipino restaurants or in my kitchen. What I have encountered are dishes that I recognize from my own childhood in Argentina but that have a wonderful Asian twist.
