This is the second time I make this simple recipe, which I found at allrecipes.com. Both times my guests, and more importantly, my potato-salad-fiend husband, really liked it. It's a very simple recipe to make as it asks for few ingredients and you don't have to peel the potatoes.
Red Potato Salad
Ingredients
3 lbs small unpeeled red potatoes 1 1/2 cups mayonnaise 2 tbsp. milk 2 tbsp. distilled white vinegar 1/2 cup sliced green onions 1/2 tsp. salt 1/4 tsp. ground black pepper 4 hardboiled eggs, chopped 1 cup sliced celery Instructions
Boil the potatoes in a large pot of salted water. Cook until tender but firm, about 15 minutes. Drain and let cool. Cut the potatoes into 1" cubes. Put the potatoes in a large bowl.
In a small bowl, whisk together the mayonnaise, milk, vinegar, green onions salt and pepper. Pour mixture over the potatoes. Add eggs and celery. Mix together, cover and refrigerate for at least 2 hours before serving.
