Provoletas are simply slices of Provolone cheese, brushed with olive oil and oregano and grilled. It's a very simple appetizer, but a very common one at Argentine asados. In Argentina, the cheese is placed directly on the grill. American Provolone cheese (we get ours at Cosco) is softer, so you're better off grilling it on top of some aluminum foil.
