(serves 4) 9 ripe bananas 2 cups orange juice honey to taste a slice of ginger 6 tsp shredded coconut 1 1/2 tsp ground cinnamon ice cream Mix the orange juice and honey. Slice bananas lengthwise. Put bananas, mixture and ginger in a small pot. Simmer until the sauce becomes syrupy. Mix the coconut and the cinnamon. Serve the bananas with ice cream, topped with the coconut.
