The recipe for this dish split pea dish was requested by one of the visitors to this site. I have never tried it myself, so I await comments on how it is. It comes from the Exotic Ethiopian Cooking cookbook and is regularly eaten during Lent. Hope you enjoy it. -2 cups red or green split peas -4 cups water -2 cups chopped red onions -2 cups oil -1 Tbsp chopped ginger -1 Tbsp chopped garlic -4 sliced fresh green Anaheim or Jalapeño peppers -1 tsp black pepper -salt to taste Wash split peas. Boil in water until soft. Drain and reserve water. Heat oil in a medium pan. Fry onions until soft. Add split peas and stir to prevent sticking. Add garlic, ginger and black pepper. Simmer for 20 to 30 minutes, stirring occassionally. Add green peppers and stir. Serve hot or cold.
