Auvergne is one of the oldest populated parts of Europe, and even today it is mostly rural and traditional. Its dishes are
simple and hearty, reflecting the magic French cooks can make with few ingredients. I would have loved to try one of the
traditional Auvergnat cheeses - the
bleu d'Auvergne and the Cantal - but I didn't have the time to go hunting for cheeses all over the Bay Area. Instead, for the
one dish that needed it, I made do with Gruyere. My menu included Auvergne's signature dish, Trufffade, as well as a
couple of other dishes I found online.
