Coconut Lime Fish Fillets

I chose this recipe because it sounded both interesting and easy to make - and quick recipes are a must now that I have a baby. It also didn't call for almost any ingredients that I couldn't easily get at my local supermarket (the exception to that was unsweetened flaked coconut, I substituted with sweetened coconut instead). It was, indeed, very easy to make. Unfortunately, I don't think it was very good. I found the fish very bland and the accompanying lime mustard sauce, though very good in its own right, too overwhelming for the fish. My husband, however, liked the fish well enough.



Coconut Lime Fish Fillets

Ingredients

  • 4 fish fillets
  • 1 egg, beaten
  • ½ cup coconut milk
  • ¾ cup breadcrumbs
  • ½ cup coconut, flaked
  • 1 tsp. lime zest

    Instructions

    Clean and remove all bones from the fish. Set aside.

    Put the egg and coconut milk in a dish and mix. In another dish, combine the breadcrumbs, flaked coconut and lime zest.

    Dip the fish fillets in the egg and then coat with the coconut mixture.

    Put the fillets in a greased baking sheet and bake for 15 minutes or until done. Serve with lime mustard sauce.
