This is the only Burundian dish that I cooked and it was pretty much a failure. It didn't have any flavor to speak off, and the green plantains had a pretty hard consistency. I wasn't completely surprised because I'd heard than Rwandan food is not very good (and when I was in Rwanda never once I was served Rwandan food), and I assume Burundian food is similar. Angry Burundians who disagree with me can comment here.
Bananas with Beans
Ingredients
- 1 lb red kidney beens
- 2 tbsp palm oil
- 1 small onion, sliced
- 4 green plantains, chopped
- 1/4 tsp salt
- Hot pepper to taste.
Instructions
Soak the beans for 3 hours. Boil for 30 minutes or until tender. Drain.
Sautee the onion in the palm oil until brown. Add beans, plaintains, salt and pepper and stir fry for 2 minutes. Add 4 cups of water. Add until the plantains are cooked, and about 1 cup of water is left. Serve hot.
