Chengdu is the capital city of the Sichuan province of China and the center of the Sichuan/Western school culinary universe. Its every day cuisine is characterized by the abundant use of peppers. Normally, I wouldn't cook food from just one city, but I got a new (to me) Chinese regional cooking book and I wanted to make something from it. Ultimately, I only cooked one dish:
