I originally skipped Cornish cuisine when I started this project - as
was the case with many regional cuisines. I just couldn't think of them
when I made up my original list. In visiting it now, I concentrated on
making just one recipe, the one that Cornwall is most famous of:

Cornish food falls, as you would expect, within the greater English culinary tradition. It's heavy on seafood, but game and diary dishes are also popular.
