Fricasé de Pollo

Chicken Fricassee


This recipe is very close to the one for Cuban beef stew in that it uses many of the same ingredients. It tastes wonderfully, and it provides an easy, satisfying and hearty weeknight meal.


Fricasé de Pollo

Ingredients

  • 4 lbs chicken pieces
  • 3 garlic cloves, pressed
  • 1 large yellow onion, sliced
  • 1 red bell pepper, chopped
  • 1/4 cup lime juice
  • 1/4 cup oil
  • 1 15oz can tomato sauce
  • 1 cup white wine
  • 1 cup water
  • 1/2 cup green olives
  • 2 tsp. salt
  • black pepper to taste
  • 1 lb potatoes, cubed

    Instructions

    Marinade the chicken pieces in a mixture of the garlic, onion, bell pepper and lime juice for at least 4 hours.

    Heat the oil over high heat in a large, wide cooking pot. Add the chicken pieces, skin side down, and brown, about 4 minutes per side. Add the marinade, the tomato sauce, white wine, water, olives, salt and pepper. Bring to a boil and then simmer, covered, for about 30 minutes. Add the potatoes and cook until tender.
