Dai grilled chicken

This recipe for grilled chicken is pretty simple and, as you could expect, quite garlicky. You can either grill or roast the chicken, I decided to do the latter for ease. The recipe calls for Sichuan peppercorns. I didn't have any so I substituted for mixed peppercorns. I probably should have added some coriander or lemon zest, but I didn't think about it. I also skipped the black peppercorns as I didn't want the marinade to be too spicy. It was perfect as it was.

My husband really liked this dish. It was a bit too garlicky for me, but a fine enough meal.


Dai Grilled Chicken

Ingredients

  • 3 lbs chicken parts
  • 5 large garlic cloves, chopped
  • 1 Tbsp. salt
  • 1 ½ tsp Sichuan peppercorns
  • 1 ½ tsp black peppercorns
  • oil, if roasting

Directions

Cut the chicken parts into 2” portions.

Mash together the garlic cloves with the salt, then add the peppercorns and mash into a paste. Alternatively, use a mini food processor to mash the ingredients together.

Rub the garlic mixture on the chicken parts. Grill, covered, over low heat until the chicken is done. Alternatively, drizzle oil over the chicken and roast in a preheated 400F oven for about 40 minutes.
